Mashed Potato

  • 1000g Red Potatoes peeled and cut into even sizes
  • 2000g Water
  • 200g Diced Butter
  • 80g Double Cream
  • Salt to taste

  1. Place the peeled diced potatoes into a heavy bottomed pan and cover with the water and add salt until the water tastes like the sea.
  2. Place onto a high heat and cook until the potatoes are just starting to fall apart
  3. Drain off the water from the potatoes and return to the pan and place back onto a low heat
  4. Mash the potatoes whilst still on the low heat, ensuring they don't catch on the bottom
  5. When the potatoes are fully mashed, beat in the butter and cream
  6. Finish by whisking to make them fluffy
