- 2000g Cored and Wedged Mixed Peppers
- 100g Crushed Garlic
- 90g Chef's Pass Onion Reduction
- 15g Salt
- 12g Peppers
- 10g Dried Oregano
- Mix all of the ingredients together until pepers are evenly coated.
- Place peppers into a roasting dish and roast at 180°C for 12-15minutes until soft and charred slightly.
- Check seasoning and add more salt and pepper as required.
- Serve in a small ramekin.
