Ingredients

  • 2000g Cored and Wedged Mixed Peppers
  • 100g Crushed Garlic
  • 90g Chef's Pass Onion Reduction
  • 15g Salt
  • 12g Peppers
  • 10g Dried Oregano

Method

  1. Mix all of the ingredients together until pepers are evenly coated.
  2. Place peppers into a roasting dish and roast at 180°C for 12-15minutes until soft and charred slightly.
  3. Check seasoning and add more salt and pepper as required.
  4. Serve in a small ramekin.
