Smokey Beef Chilli

  • 50ml Vegetable Oil
  • 2 Peeled and Diced Onions
  • 2 Diced Red Peppers
  • 4 Peeled and Crushed Garlic Cloves
  • 20g Chilli Powder
  • 30g Paprika
  • 20g Ground Cumin
  • 1200g Beef Mince
  • 800ml Smoked Stock
  • 800g Chopped Tomatoes
  • 20g Sugar
  • 50g Tomato Puree
  • 600g Cooked Kidney Beans

  1. Brown the mince in a heavy bottomed pan until golden, and then set aside.
  2. Put your pan on the hob over a medium heat. Add the oil and the onions and cook, stirring fairly frequently, for about 5 minutes, or until the onions are soft.
  3. Add the garlic, red pepper, hot chilli powder, paprika and ground cumin. Stir, then cook for another 5 minutes. 
  4. Add the tomato paste and stir well. Add the chopped tomato and smoked stock.
  5. Add the browned mince to the sauce and bring back to the boil. Add the kidney beans and simmer until reduced to a desired consistency.
  6. Check seasoning, and serve.
